On Tuesday, July 12, following the Village Board meeting, Alex Koks will meet with the Village Zoning Board to review changes in his original plan for the property at the corner of Main and John Streets. The changes he would like to make are for the first floor of the planned Bed and Breakfast and restaurant. He would like to decrease the size of the restaurant to serve 24 people. In the remainder of the first floor he would like to construct an apartment for the manager of the B&B and a handicapped accessible guest room.
“Today’s economy just doesn’t make a large restaurant in Hoosick Falls practical,” he said. “I would like to start with a small restaurant. Then, if there is a need to expand, I can always remove the apartment and put it on the second floor. If more space is needed, I can remove the downstairs guest room.”
What Type Of Restaurant
At this point Koks is looking for input from the community as to the type of restaurant that should be in the building. He thinks a restaurant with a menu similar to the one Dougherty’s had before the fire would be appropriate. “They served nice food, classic foods,” he said. To start he would prefer to serve just beer and wine. He is open to any and all suggestions.
