Brown’s Brewing Hires New Kitchen Manager For Troy And Hoosick Falls

“As we reach our 25th year in the midst of an explosion of craft beer, we are paying close attention to our relevancy with the products we offer. Melissa is inspired by whole food cooking and sourcing ingredients as close to home as possible. Her passion for canning, pickling, and preserving foods is also exciting for us,” said Garry and Kelly Brown. “We believe Melissa’s techniques and leadership will guide the food part of our business in a way that will pair perfectly with the quality of the beer we produce.”
With the opening of the full kitchen at the Walloomsac Taproom in Hoosick Falls this summer, expect delicious and innovative takes on comfort food that comes from local growers, producers, and foragers. A custom-built wood-fire grill will be the workhorse of the new kitchen, providing a unique visual (it will be visible from the taproom), and a unique flavor to the dishes offered. Under Doney Sheridan’s direction, both locations will host special beer and food dining experiences.
A graduate of Schenectady County Community College, she became an American Culinary Federation Certified Executive Chef in 2013. Her professional experience as head and area chef of ShopRite Supermarkets, executive chef positions in Lake George, and her current teaching position at SCCC provide a strong knowledge of the restaurant business, a familiarity of the area, and the skills needed to successfully lead kitchen teams. As a contestant on seven episodes of TV’s Hell’s Kitchen in 2010, her ability to stay cool in the kitchen is proven.
“I am truly excited to be able to join a local family-owned company,” said Doney Sheridan, a native of Latham. “Brown’s is a well-known, established, community-based, and innovative company that is the perfect fit for me. The opportunity to play with a variety of fresh local flavors excites me. I hope to entice the palates of our guests by pairing our foods with the best locally brewed craft beer around. It makes me feel like a kid on the playground.”
The Troy Taproom was the first brewery restaurant in the Capital Region when it opened as Brown & Moran Brewing Company in 1993 and has been thriving to this day. The Walloomsac Taproom in Hoosick Falls opened in 2014 in a beautifully renovated 19th century brick factory building on the Walloomsac River, which also housesBrown’s bottling facility. The Browns dedication to the area has provided jobs, a new life for an abandoned structure, and a boost for the local economy.[/private]
